Ingredients
Scale
- 2 cups almond flour
- 1/4 cup erythritol
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips or berries (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- In a large mixing bowl, combine almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together melted butter, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until a dough forms. Fold in chocolate chips or berries if using.
- Scoop the dough onto the prepared baking sheet, forming 8 equal-sized scones and flattening them slightly.
- Bake for 15-20 minutes until golden brown around the edges. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Measure almond flour accurately to avoid dry or wet scones.
- Use room temperature eggs and melted butter for a smoother dough.
- Avoid overmixing the dough to keep scones tender.
- Check baking time as ovens vary; cover with foil if browning too quickly.
