Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 1 bell pepper, diced
  • 1 small head of green cabbage, chopped (about 4 cups)
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cooked rice (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrot and bell pepper, cooking for an additional 5 minutes until softened.
  4. Add the chopped cabbage, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, thyme, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the cabbage is tender.
  6. If using, stir in the cooked rice and heat through for an additional 5 minutes.
  7. Serve hot, garnished with fresh parsley.

  • For a vegetarian version, substitute the ground meat with lentils or a plant-based meat alternative and use vegetable broth instead of beef broth.
