- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 large carrot, diced
- 1 bell pepper, diced
- 1 small head of green cabbage, chopped (about 4 cups)
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) tomato sauce
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cooked rice (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot and bell pepper, cooking for an additional 5 minutes until softened.
- Add the chopped cabbage, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, thyme, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the cabbage is tender.
- If using, stir in the cooked rice and heat through for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For a vegetarian version, substitute the ground meat with lentils or a plant-based meat alternative and use vegetable broth instead of beef broth.
- Add a tablespoon of lemon juice before serving for a bright flavor boost.
