- 1 cup cottage cheese
- 2 cups fresh spinach, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup diced onion
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F.
- In a large bowl, whisk together the eggs, cottage cheese, oregano, salt, and pepper until well combined.
- In an oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent.
- Stir in the minced garlic and chopped spinach, cooking for an additional 2-3 minutes or until the spinach wilts.
- Pour the egg mixture into the skillet, making sure the spinach and onion are evenly distributed.
- Sprinkle the cheddar and Parmesan cheese on top.
- Cook on the stovetop for 2-3 minutes, then transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the frittata is set and lightly browned on top.
- Remove from the oven and let it cool slightly before slicing.
