Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together the eggs, cottage cheese, oregano, salt, and pepper until well combined.
  3. In an oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent.
