Description

Delicious low-carb dessert with a creamy coconut filling and a buttery crust.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup erythritol
  • 1/4 cup butter, melted
  • 1 cup coconut milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix almond flour, shredded coconut, erythritol, and melted butter until combined.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, whisk together coconut milk, eggs, vanilla extract, baking powder, and sea salt.
  5. Pour the coconut mixture over the crust in the baking dish.
  6. Bake for 25-30 minutes or until set and lightly golden.
  7. Let cool before slicing into bars.

Notes

  • Store bars in the refrigerator for up to a week.
  • For extra coconut flavor, add more shredded coconut to the filling.
