A flavorful recipe for Tuscan Chicken Thighs that combines tender chicken with a creamy sauce, cherry tomatoes, and spinach.

- 2 pounds bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken thighs with salt, pepper, garlic powder, oregano, basil, and red pepper flakes.
- Place the chicken thighs skin-side down in the skillet and sear for about 5-7 minutes until the skin is golden brown. Flip the chicken and cook for an additional 3-4 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Stir in the baby spinach and cook until wilted, about 1-2 minutes.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
- Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the top.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh basil leaves.
Notes
- For a lighter version, use boneless, skinless chicken thighs and reduce the heavy cream by half.
- Add sliced mushrooms or bell peppers to the skillet for extra vegetables and flavor.
