Description

Zucchini Salmon Fritters are a delightful and healthy dish that combines the goodness of fresh zucchini with the rich flavor of salmon. These fritters are easy to make, packed with nutrients, and perfect for a keto-friendly meal.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 can (14.75 ounces) wild-caught salmon, drained and flaked
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, chopped
  • 2 tablespoons olive oil (for frying)

For the zesty lemon dill sauce, gather the following ingredients:

  • 1/2 cup sour cream
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis and remove excess moisture by squeezing them in a clean kitchen towel.
  2. In a large mixing bowl, combine the grated zucchini, drained salmon, eggs, almond flour, Parmesan cheese, garlic powder, onion powder, black pepper, and green onions. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat. Shape the mixture into patties and flatten them slightly.
  4. Cook the patties in the skillet for 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.
  5. For the lemon dill sauce, mix sour cream, dill, lemon juice, garlic powder, salt, and pepper in a bowl. Serve with the fritters.

Notes

  • Remove excess moisture from the zucchini to prevent soggy fritters.
  • Cook in batches to avoid overcrowding the skillet.
  • Serve immediately for the best taste and texture.
