- 2 tablespoons erythritol (or preferred sweetener)
- 1 large egg
- 2 tablespoons unsweetened almond milk
- 1 tablespoon melted coconut oil
- 1/2 teaspoon vanilla extract
Instructions
- In a microwave-safe mug or bowl, combine almond flour, cocoa powder, baking powder, salt, and erythritol. Mix well until there are no lumps.
- Add the egg, almond milk, melted coconut oil, and vanilla extract to the dry ingredients. Stir until the mixture is smooth and well combined.
- Microwave on high for 60 seconds. Check for doneness; if it’s still wet in the center, microwave for an additional 10-15 seconds.
- Allow the brownie to cool for a minute before enjoying it straight from the mug or transferring it to a plate.
Notes
- For added flavor, mix in a tablespoon of sugar-free chocolate chips or chopped nuts before microwaving.
