Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 medium green pepper, finely chopped
  • 1 clove garlic, finely minced
  • 1 pound grass-fed ground beef
  • 3 heaping tablespoons tomato paste
  • 1/2 cup diced tomatoes
  • 8 ounces beef bone broth
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper


Instructions

  1. In a large stock pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onions and green pepper, sautéing for 1-2 minutes until softened.
  3. Stir in the minced garlic, salt, pepper, chili powder, and cumin.
  4. Add the ground beef to the pot and cook until browned, breaking it apart as it cooks.
  5. Stir in the tomato paste, diced tomatoes, and beef bone broth.
  6. Bring the mixture to a boil, then reduce the heat to low.
  7. Simmer for 20-25 minutes, stirring occasionally.
  8. Serve hot, topped with shredded cheddar cheese, sour cream, avocado, or jalapeños, if desired.

Notes

  • For added heat, include diced jalapeños or a pinch of cayenne pepper during cooking.
