These Air Fryer Eggplant Steaks are a delicious low-carb and keto-friendly comfort food that won’t leave you missing out on flavor!


Ingredients

  • 1 large eggplant
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Slice the eggplant into 3/4-inch thick steaks.
  2. Pat the eggplant dry with a paper towel to remove excess moisture.
  3. In a bowl, mix olive oil, salt, pepper, garlic powder, paprika, and Italian seasoning.
  4. Brush the mixture onto both sides of the eggplant steaks.
  5. Preheat the air fryer to 400°F (200°C).
  6. Place the eggplant steaks in the air fryer basket in a single layer.
  7. Cook for 10-12 minutes, flipping halfway through.
  8. Sprinkle Parmesan cheese over the steaks and cook for an additional 2 minutes until cheese is melted.
  9. Remove from the air fryer and let cool slightly before serving.

  • For extra flavor, marinate the eggplant steaks in the oil and spices for 30 minutes before cooking.
