- 1 large eggplant
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
Instructions
- Slice the eggplant into 3/4-inch thick steaks.
- Pat the eggplant dry with a paper towel to remove excess moisture.
- In a bowl, mix olive oil, salt, pepper, garlic powder, paprika, and Italian seasoning.
- Brush the mixture onto both sides of the eggplant steaks.
- Preheat the air fryer to 400°F (200°C).
- Place the eggplant steaks in the air fryer basket in a single layer.
- Cook for 10-12 minutes, flipping halfway through.
- Sprinkle Parmesan cheese over the steaks and cook for an additional 2 minutes until cheese is melted.
- Remove from the air fryer and let cool slightly before serving.
Notes
- For extra flavor, marinate the eggplant steaks in the oil and spices for 30 minutes before cooking.
- These steaks can be served with marinara sauce or your favorite dipping sauce.
