Description
Deliciously rich and gooey Lava Cakes made specifically for a keto diet, perfectly cooked in an air fryer.
Ingredients

- 1/2 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or other keto sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
Instructions
- In a bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Preheat the air fryer to 350°F (175°C).
- Grease ramekins and pour the batter into them, filling each about 2/3 full.
- Air fry for 8-10 minutes until the edges are set but the center is still soft.
- Allow to cool for a minute before inverting onto a plate.
Notes
- Let the cakes cool slightly before serving to avoid spilling the lava.
- Serve with whipped cream or berries if desired.
