Description

Deliciously rich and gooey Lava Cakes made specifically for a keto diet, perfectly cooked in an air fryer.


Ingredients

Scale
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or other keto sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract


Instructions

  1. In a bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt.
  2. In another bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Preheat the air fryer to 350°F (175°C).
  5. Grease ramekins and pour the batter into them, filling each about 2/3 full.
  6. Air fry for 8-10 minutes until the edges are set but the center is still soft.
  7. Allow to cool for a minute before inverting onto a plate.

Notes

  • Let the cakes cool slightly before serving to avoid spilling the lava.
  • Serve with whipped cream or berries if desired.
