- 4 tablespoons coconut flour
- 1 teaspoon baking powder
- ½ teaspoon garlic powder
- ¼ teaspoon xanthan gum
- 6 ounces mozzarella cheese, shredded
- 1 large egg
- 1 tablespoon coconut flour (for kneading dough)
- 1 tablespoon unsalted butter, melted
- Coarse salt (for topping)
- For the Mustard Sauce:
- 2 tablespoons mayonnaise
- 2 tablespoons spicy brown mustard
Instructions
- Gather and prep all of your ingredients.
- In a bowl, whisk together the coconut flour, baking powder, garlic powder, and xanthan gum.
- Place the shredded mozzarella into a microwave-safe bowl and microwave for 30-40 seconds at a time until completely melted and easy to stir.
- Add the flour mixture into the melted mozzarella, then add the egg. Stir well using a spatula or fork, working everything together until a solid dough forms.
- Once the cheese dough is cool enough to handle, dust your work surface with coconut flour and knead the dough with your hands until it comes together completely.
- Divide the dough into equal portions, then roll each portion into a log. Cut the logs into bite-sized pieces. Brush the pieces with melted butter and set aside.
- Place the pretzel bites into the rack of the air fryer and sprinkle with coarse salt to taste. Lightly press the salt into the dough if needed. Air fry at 350°F for 5-7 minutes or until puffed and golden brown.
- Mix together the mayonnaise and spicy brown mustard for the dipping sauce, then serve the pretzel bites while hot. Enjoy!
