Description

Almond & Coconut “Sellou” Energy Bites (No Sugar) are delicious and nutritious snacks made with wholesome ingredients.


Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/2 cup tahini or almond butter
  • 1/4 cup ground flaxseed
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/4 cup chopped nuts (such as almonds, walnuts, or pistachios)
  • 1/4 cup unsweetened cocoa powder (optional for a chocolate twist)


Instructions

  1. In a large bowl, mix the almond flour, shredded coconut, ground flaxseed, cinnamon, and sea salt until well combined.
  2. In another bowl, whisk together the tahini, water, and vanilla extract until smooth.
  3. If using cocoa powder, incorporate it into the wet mixture.
  4. Gradually add the wet ingredients to the dry mixture, stirring until thoroughly blended. Adjust the consistency with more water if too dry.
  5. Gently fold in the chopped nuts.
  6. Shape the mixture into small balls, roughly 1 inch in diameter, and arrange them on a baking sheet lined with parchment paper.
  7. Refrigerate the balls for a minimum of 30 minutes to allow them to set.
  8. Store the bliss balls in an airtight container in the fridge for up to a week.
