A delightful Almond Flour Bee Sting Cake that is both delicious and easy to make.

- 2 cups almond flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup heavy cream
- 2 tablespoons honey
- 1/2 cup sliced almonds
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, combine almond flour, sugar, baking powder, and salt. Mix well.
- In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the cake cools, whip the heavy cream in a separate bowl until soft peaks form. Gently fold in the honey until well combined.
- Once the cake is completely cool, slice it in half horizontally. Spread half of the whipped cream mixture on the bottom layer, then place the top layer back on.
- Spread the remaining whipped cream on top of the cake and sprinkle with sliced almonds.
- Chill the cake in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For added flavor, consider incorporating a layer of fresh berries or fruit preserves between the cake layers.
- If you prefer a sweeter topping, drizzle additional honey over the whipped cream before adding the sliced almonds.
