Ingredients

  • 2 cups almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons honey
  • 1/2 cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, combine almond flour, sugar, baking powder, and salt. Mix well.
  3. In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  6. While the cake cools, whip the heavy cream in a separate bowl until soft peaks form. Gently fold in the honey until well combined.
  7. Once the cake is completely cool, slice it in half horizontally. Spread half of the whipped cream mixture on the bottom layer, then place the top layer back on.
  8. Spread the remaining whipped cream on top of the cake and sprinkle with sliced almonds.
  9. Chill the cake in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
