- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup plain Greek yogurt
- 1/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil or unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 orange
- 1/4 cup sliced almonds for garnish
For the syrup:
- 1/2 cup water
- 1/4 cup granulated erythritol
- 1 teaspoon orange blossom water (optional)
- Zest of 1 orange
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8-inch square baking dish with coconut oil or butter.
- In a spacious bowl, whisk together the almond flour, erythritol, baking powder, and salt until well blended.
- In a separate bowl, combine the Greek yogurt, almond milk, melted coconut oil, eggs, vanilla extract, and orange zest, whisking until smooth and creamy.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Pour the batter into the prepared baking dish, leveling the surface with a spatula.
- Evenly distribute the sliced almonds on top.
- Bake for 25-30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- While the basbousa bakes, prepare the syrup by combining water, erythritol, and orange zest in a small saucepan. Bring to a boil, then lower the heat and let it simmer for 5-7 minutes until it thickens slightly.
- If desired, add the orange blossom water before removing from heat.
- Once the basbousa is baked, take it out of the oven and immediately drizzle the warm syrup over the top.
- Let it cool in the pan for 15-20 minutes before cutting into squares.
