- 8 large portobello mushrooms, stems removed
- 4 slices of bacon, chopped
- 1 ripe avocado, diced
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving a little bacon grease in the skillet.
- Add the portobello mushrooms to the skillet, gill side up. Brush the tops with olive oil and season with garlic powder, onion powder, salt, and pepper.
- Bake the mushrooms in the preheated oven for 10 minutes.
- Remove the mushrooms from the oven and sprinkle the cooked bacon and diced avocado evenly over each mushroom.
- Top each mushroom with shredded mozzarella cheese.
- Return the mushrooms to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For a spicy kick, add diced jalapeños on top before baking.
- You can substitute the mozzarella cheese with cheddar or pepper jack for a different flavor profile.
