Ingredients

  • 8 large portobello mushrooms, stems removed
  • 4 slices of bacon, chopped
  • 1 ripe avocado, diced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving a little bacon grease in the skillet.
  3. Add the portobello mushrooms to the skillet, gill side up. Brush the tops with olive oil and season with garlic powder, onion powder, salt, and pepper.
  4. Bake the mushrooms in the preheated oven for 10 minutes.
  5. Remove the mushrooms from the oven and sprinkle the cooked bacon and diced avocado evenly over each mushroom.
  6. Top each mushroom with shredded mozzarella cheese.
  7. Return the mushrooms to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with fresh parsley before serving.

Notes

  • For a spicy kick, add diced jalapeños on top before baking.
