- 2 ripe avocados
- 4 large eggs
- 4 slices bacon
- Salt to taste
- Pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the avocados in half and remove the pit.
- Place the avocado halves in a baking dish. If they don’t sit flat, you can use crumpled foil to stabilize them.
- Crack an egg into each avocado half.
- Season with salt and pepper.
- Chop the bacon and sprinkle it on top of the eggs.
- Bake in the oven for 12-15 minutes, until the eggs are cooked to your liking.
- Garnish with fresh herbs before serving.
Notes
- For a little spice, add a dash of hot sauce before baking.
- Feel free to substitute or add your favorite toppings!
