Description

Delicious baked avocado eggs topped with crispy bacon – a perfect breakfast or brunch option!


Ingredients

Scale
  • 2 ripe avocados
  • 4 large eggs
  • 4 slices bacon
  • Salt to taste
  • Pepper to taste
  • Fresh herbs for garnish


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the avocados in half and remove the pit.
  3. Place the avocado halves in a baking dish. If they don’t sit flat, you can use crumpled foil to stabilize them.
  4. Crack an egg into each avocado half.
  5. Season with salt and pepper.
  6. Chop the bacon and sprinkle it on top of the eggs.
  7. Bake in the oven for 12-15 minutes, until the eggs are cooked to your liking.
  8. Garnish with fresh herbs before serving.

Notes

  • For a little spice, add a dash of hot sauce before baking.
