Description

Savory Chicken Skewers with Moroccan Spice Marinade

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts, diced into 1-inch chunks
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons Moroccan spice blend (ras el hanout)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • 1 red bell pepper, chopped into 1-inch squares
  • 1 yellow bell pepper, chopped into 1-inch squares
  • 1 medium red onion, cut into thick wedges
  • Wooden or metal skewers

Instructions

  1. Begin by heating your oven to 400°F (200°C). If you’re using wooden skewers, remember to soak them in water for about 30 minutes to avoid burning during cooking.
  2. In a spacious mixing bowl, whisk together the olive oil, Moroccan spice blend, garlic powder, onion powder, sea salt, black pepper, and lemon juice until everything is well combined.
  3. Introduce the chicken pieces into the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and allow it to marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours for a deeper flavor infusion.
  4. Once marinated, skewer the chicken pieces along with the bell peppers and red onion, alternating them for a colorful presentation.
  5. Arrange the skewers on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  6. For a delightful char, switch to broil mode for the last 2-3 minutes of cooking.
  7. After removing from the oven, allow the skewers to rest for a few moments before serving.

Notes

  • For an added layer of heat, consider mixing in a dash of cayenne pepper into the marinade.
  • Feel free to swap the chicken for shrimp or cubed tofu for a different protein twist.
  • Pair with couscous or a refreshing salad for a well-rounded meal.
