- 2 ripe bananas, mashed
- 1/4 cup melted coconut oil
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tablespoon matcha powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the melted coconut oil, mashed bananas, and brown sugar.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, matcha powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts if using.
- Divide the batter among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a sweeter muffin, you can increase the amount of brown sugar.
- These muffins freeze well; store in an airtight container.
- Feel free to substitute the walnuts with chocolate chips for a different flavor.
