Description

Deliciously moist and vibrant, these Banana Matcha Muffins combine the sweetness of ripe bananas with the earthy flavor of matcha, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1/4 cup melted coconut oil
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon matcha powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the melted coconut oil, mashed bananas, and brown sugar.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, matcha powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts if using.
  6. Divide the batter among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a sweeter muffin, you can increase the amount of brown sugar.
  • These muffins freeze well; store in an airtight container.
  • Feel free to substitute the walnuts with chocolate chips for a different flavor.
