- 2 pounds beef cheeks
- 1 cup tallow
- 3 garlic cloves, minced
- 2 sprigs fresh thyme
- 1 teaspoon black peppercorns
- 1 teaspoon smoked paprika
- 1 bay leaf
- Salt to taste
Instructions
- Preheat the oven to 250°F (120°C).
- In a large oven-safe pot, combine the tallow, garlic, thyme, black peppercorns, smoked paprika, bay leaf, and salt.
- Add the beef cheeks to the pot, ensuring they’re covered by the tallow.
- Cover the pot and place it in the oven for about 8 hours, until the meat is tender.
- Remove from the oven and let it cool slightly before serving.
Notes
- This dish can be prepared in advance and stored in the refrigerator for up to a week.
- Serve with crusty bread or over mashed potatoes for a hearty meal.
