- 1 pound beef chuck roast, cut into 1-inch cubes
- 1 tablespoon coconut oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon turmeric powder
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsweetened coconut flakes
- 1/4 cup beef broth
- 1 tablespoon lime juice
- Fresh cilantro, for garnish
Instructions
- In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the beef cubes to the pot, browning them on all sides for about 5-7 minutes.
- Sprinkle in the turmeric, coriander, cumin, chili powder, salt, and black pepper. Stir well to coat the beef with the spices.
- Pour in the beef broth, bring to a simmer, then cover and reduce heat to low. Cook for 1.5 to 2 hours, or until the beef is tender.
- Once the beef is tender, remove the lid and increase the heat to medium-high. Stir in the coconut flakes and lime juice. Cook for an additional 10-15 minutes, stirring frequently, until the liquid has evaporated and the beef is slightly caramelized.
- Remove from heat and let it cool slightly before serving. Garnish with fresh cilantro.

- For added flavor, consider marinating the beef in the spices and lime juice for a few hours or overnight before cooking.
- If you prefer a spicier dish, add more chili powder or include fresh chopped chilies during the cooking process.
