Delicious bite-sized Beef Wellington Bites, perfect for appetizers or a party snack.

- 1 pound beef tenderloin
- 1 tablespoon olive oil
- 1 cup mushrooms, finely chopped
- 1 tablespoon Dijon mustard
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the beef on all sides until browned.
- Remove the beef and let it cool, then brush with Dijon mustard.
- Add chopped mushrooms to the same skillet and cook until all moisture has evaporated.
- Roll out the puff pastry and cut into squares.
- Place a piece of beef and mushroom mixture on each square, then fold the pastry and seal.
- Brush each pastry with beaten egg.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Serve warm.

- Allow the beef to rest before slicing for optimal tenderness.
- These bites can be prepared ahead of time and baked just before serving.
