A flavorful and satisfying dish combining tender chicken thighs, earthy mushrooms, and a zesty marinade — all keto-approved.
Ingredients
- 1 lb boneless, skinless chicken thighs, bite-sized pieces
- 8 oz mushrooms, sliced (button or cremini)
- 3 tbsp olive oil
- 1 tbsp soy sauce (or coconut aminos)
- 1 tbsp apple cider vinegar
- 2 tsp freshly ground black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt to taste
- 2 green onions, sliced (for garnish)
Instructions

Marinate the Chicken
In a bowl, mix chicken with soy sauce, vinegar, pepper, garlic powder, onion powder, and salt. Let sit for 15–30 minutes. -
Prep Mushrooms
Clean and slice evenly. -
Cook Chicken
Heat 2 tbsp olive oil in a skillet (med-high heat). Sauté chicken 5–7 minutes until browned and cooked through. Remove and set aside. -
Sauté Mushrooms
Add remaining 1 tbsp olive oil. Cook mushrooms 4–5 minutes until golden and tender. -
Combine & Heat Through
Return chicken to skillet, stir to combine, and cook another 2–3 minutes.
Notes
- Marinating 30+ minutes gives deeper flavor.
- Avoid overcrowding mushrooms—cook in batches if needed.
