Ingredients

  • 1 lb boneless, skinless chicken thighs, bite-sized pieces
  • 8 oz mushrooms, sliced (button or cremini)
  • 3 tbsp olive oil
  • 1 tbsp soy sauce (or coconut aminos)
  • 1 tbsp apple cider vinegar
  • 2 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Marinate the Chicken
    In a bowl, mix chicken with soy sauce, vinegar, pepper, garlic powder, onion powder, and salt. Let sit for 15–30 minutes.

  2. Prep Mushrooms
    Clean and slice evenly.

  3. Cook Chicken
    Heat 2 tbsp olive oil in a skillet (med-high heat). Sauté chicken 5–7 minutes until browned and cooked through. Remove and set aside.

  4. Sauté Mushrooms
    Add remaining 1 tbsp olive oil. Cook mushrooms 4–5 minutes until golden and tender.

  5. Combine & Heat Through
    Return chicken to skillet, stir to combine, and cook another 2–3 minutes.

Notes

  • Marinating 30+ minutes gives deeper flavor.
  • Avoid overcrowding mushrooms—cook in batches if needed.
