- 1 cup fresh raspberries
- 1 cup water
- 1/4 cup erythritol (or preferred keto sweetener)
- 1 packet (0.3 oz) unflavored gelatin
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- Red food coloring (optional)
- 1/4 cup sugar-free raspberry syrup (for garnish)
Instructions
- In a small saucepan, combine the water and erythritol. Heat over medium heat until the sweetener dissolves completely.
- Once dissolved, remove from heat and sprinkle the unflavored gelatin over the mixture. Stir well until the gelatin is fully dissolved.
- Add the fresh raspberries to the gelatin mixture and gently mash them with a fork to release their juices.
- Pour the mixture into small cups or molds and refrigerate for at least 2 hours or until set.
- In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. If desired, add a few drops of red food coloring to achieve a more vibrant appearance.
- Once the jello has set, remove it from the refrigerator and top each cup with a dollop of whipped cream.
- Drizzle sugar-free raspberry syrup over the whipped cream for a bloody effect.
