Ingredients

  • 1 cup fresh raspberries
  • 1 cup water
  • 1/4 cup erythritol (or preferred keto sweetener)
  • 1 packet (0.3 oz) unflavored gelatin
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Red food coloring (optional)
  • 1/4 cup sugar-free raspberry syrup (for garnish)


Instructions

  1. In a small saucepan, combine the water and erythritol. Heat over medium heat until the sweetener dissolves completely.
  2. Once dissolved, remove from heat and sprinkle the unflavored gelatin over the mixture. Stir well until the gelatin is fully dissolved.
  3. Add the fresh raspberries to the gelatin mixture and gently mash them with a fork to release their juices.
  4. Pour the mixture into small cups or molds and refrigerate for at least 2 hours or until set.
  5. In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form. If desired, add a few drops of red food coloring to achieve a more vibrant appearance.
  6. Once the jello has set, remove it from the refrigerator and top each cup with a dollop of whipped cream.
  7. Drizzle sugar-free raspberry syrup over the whipped cream for a bloody effect.
