Ingredients

  • 4 large eggs, separated
  • 1 cup cottage cheese
  • 1/4 cup almond flour
  • 1 tablespoon sugar-free sweetener (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1 cup fresh blueberries
  • Pinch of salt

Instructions

  1. Preheat the oven to 300°F. Line a baking tray with parchment paper.
  2. In a mixing bowl, whip the egg whites with cream of tartar and salt until stiff peaks form.
  3. In another bowl, blend the egg yolks, cottage cheese, almond flour, vanilla extract, and sugar-free sweetener until smooth.
  4. Gently fold the yolk mixture into the whipped egg whites until just combined.
  5. Carefully fold in the fresh blueberries.
  6. Spoon the mixture onto the prepared tray in mounds, spacing them apart.
  7. Bake for 25 minutes or until golden brown. Allow to cool before serving.
