- 4 large eggs, separated
- 1 cup cottage cheese
- 1/4 cup almond flour
- 1 tablespoon sugar-free sweetener (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cream of tartar
- 1 cup fresh blueberries
- Pinch of salt
Instructions
- Preheat the oven to 300°F. Line a baking tray with parchment paper.
- In a mixing bowl, whip the egg whites with cream of tartar and salt until stiff peaks form.
- In another bowl, blend the egg yolks, cottage cheese, almond flour, vanilla extract, and sugar-free sweetener until smooth.
- Gently fold the yolk mixture into the whipped egg whites until just combined.
- Carefully fold in the fresh blueberries.
- Spoon the mixture onto the prepared tray in mounds, spacing them apart.
- Bake for 25 minutes or until golden brown. Allow to cool before serving.
