Description

These braised short ribs are infused with a rich coffee rub that elevates their flavor to new heights.


Ingredients

  • 4 pounds bone-in short ribs
  • 1/4 cup ground coffee
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1 cup red wine
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 1 tablespoon fresh thyme


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a small bowl, mix together the coffee, brown sugar, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.
  3. Rub the coffee mixture all over the short ribs.
  4. In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned.
  5. Remove the short ribs and set them aside. Add the chopped onion, carrots, and celery to the pot and sauté until softened.
  6. Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
  7. Add the short ribs back into the pot along with bay leaves and thyme.
  8. Cover the pot and transfer it to the oven. Braise for about 3 hours, or until the ribs are tender.
  9. Remove from the oven and let rest for a few minutes before serving.

Notes

  • Serve with mashed potatoes or a side of vegetables.
  • This dish benefits from being made a day ahead; the flavors deepen after resting.
