Description
These braised short ribs are infused with a rich coffee rub that elevates their flavor to new heights.

- 4 pounds bone-in short ribs
- 1/4 cup ground coffee
- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups beef broth
- 1 cup red wine
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 bay leaves
- 1 tablespoon fresh thyme
Instructions
- Preheat your oven to 300°F (150°C).
- In a small bowl, mix together the coffee, brown sugar, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.
- Rub the coffee mixture all over the short ribs.
- In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned.
- Remove the short ribs and set them aside. Add the chopped onion, carrots, and celery to the pot and sauté until softened.
- Pour in the beef broth and red wine, scraping up any browned bits from the bottom of the pot.
- Add the short ribs back into the pot along with bay leaves and thyme.
- Cover the pot and transfer it to the oven. Braise for about 3 hours, or until the ribs are tender.
- Remove from the oven and let rest for a few minutes before serving.
Notes
- Serve with mashed potatoes or a side of vegetables.
- This dish benefits from being made a day ahead; the flavors deepen after resting.
