- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1 can coconut milk
- 1 pound white fish, cut into chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 bunch cilantro, chopped
- 1 lime, juiced
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent.
- Stir in the garlic, paprika, and cayenne pepper, cooking for an additional minute.
- Add the diced tomatoes and coconut milk, bringing the mixture to a boil.
- Add the fish and bell peppers to the pot, reducing the heat to simmer.
- Cover and cook for about 15 minutes, or until the fish is cooked through.
- Stir in the cilantro and lime juice before serving.
