- 2 cups broccoli florets
- 1¼ cups grated cheddar cheese
- ¼ cup almond flour
- 1 large egg
- ¼ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 pinch red pepper flakes
- ¼ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
- Flaked salt or additional sea salt (optional)
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Steam the broccoli florets until tender, then pulse them in a food processor until they resemble rice.
- In a mixing bowl, combine the pulsed broccoli, cheddar cheese, almond flour, egg, garlic powder, onion powder, red pepper flakes, sea salt, and black pepper.
- Shape the mixture into small rounds and place them on the prepared baking sheet. Sprinkle with additional salt if desired.
- Bake for 15-20 minutes or until the bites are golden brown and crispy.
- Allow to cool slightly before serving.
Notes
- For added flavor, consider mixing in some cooked bacon bits or chopped green onions.
- You can substitute the cheddar cheese with mozzarella or a cheese blend for a different taste.
