  • For the Creamy Blue Cheese Dip:

  • 1/4 cup buttermilk
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Salt and freshly cracked black pepper to taste


Instructions

  1. Begin by heating your oven to 450°F and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, combine the flour, sparkling water, garlic powder, onion powder, cayenne pepper, sea salt, and black pepper, whisking until you achieve a smooth batter.
  3. Gently fold in the cauliflower florets, ensuring they are thoroughly coated in the batter.
  4. Arrange the battered cauliflower in a single layer on the prepared baking sheet. Bake for 20 minutes, flipping the pieces halfway through to achieve an even golden brown color.
  5. While the cauliflower is baking, whip up the creamy blue cheese dip. In a separate bowl, mix together the crumbled blue cheese, Greek yogurt, buttermilk, apple cider vinegar, garlic powder, and a pinch of salt and pepper. Stir until the mixture is smooth and creamy.
