Description

These Buffalo Cauliflower Bites are a perfect keto snack, paired with a delicious sugar-free blue cheese dip.


Ingredients

  • 1 head cauliflower, cut into bite-sized florets
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 cup hot sauce
  • 1/4 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1/4 cup blue cheese, crumbled
  • 1 tablespoon fresh chives, chopped


Instructions

  1. Preheat the oven to 450°F (232°C).
  2. In a large bowl, combine almond flour, garlic powder, onion powder, paprika, cayenne pepper, and salt.
  3. Add the cauliflower florets to the bowl and toss until evenly coated.
  4. Spread the cauliflower onto a baking sheet in a single layer.
  5. Bake for 20 minutes or until golden brown and crispy.
  6. In a separate bowl, mix hot sauce and melted butter.
  7. Remove the cauliflower from the oven and toss with the hot sauce mixture.
  8. Return to the oven and bake for an additional 10 minutes.
  9. For the dip, mix sour cream, blue cheese, and chives in a small bowl.
  10. Serve the cauliflower bites hot with the blue cheese dip.

Notes

  • For a milder flavor, reduce the amount of cayenne pepper.
  • These bites can be made ahead and reheated in the oven.
