Description

Delicious and healthy burrito zucchini boats filled with a savory mixture of meat, beans, and spices.


Ingredients

  • 4 medium zucchini
  • 1 pound ground beef or turkey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchini in half lengthwise and scoop out the center to create boats.
  3. In a skillet over medium heat, cook ground beef or turkey until browned.
  4. Add chili powder, cumin, black beans, corn, salsa, and salt; cook until heated through.
  5. Spoon the mixture into the zucchini boats.
  6. Top with shredded cheese and cilantro.
  7. Bake in preheated oven for 20-25 minutes.
