Ingredients

- 4 medium zucchini
- 1 pound ground beef or turkey
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese
- 1/4 cup chopped cilantro
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C).
- Cut zucchini in half lengthwise and scoop out the center to create boats.
- In a skillet over medium heat, cook ground beef or turkey until browned.
- Add chili powder, cumin, black beans, corn, salsa, and salt; cook until heated through.
- Spoon the mixture into the zucchini boats.
- Top with shredded cheese and cilantro.
- Bake in preheated oven for 20-25 minutes.
