- 1 whole chicken
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon fresh sage, chopped
- 1 cup heavy cream
- 2 garlic cloves, minced
Instructions
- Preheat the oven to 425°F (220°C).
- Season the chicken with salt and pepper.
- In a large ovenproof skillet, melt the butter over medium heat.
- Place the chicken in the skillet, breast side down, and roast for 45 minutes.
- Flip the chicken over, add the minced garlic and chopped sage, and roast for an additional 15 minutes.
- Transfer the chicken to a plate and let rest.
- In the same skillet, add the heavy cream and stir to combine with pan drippings; reduce heat and let simmer.
- Slice the chicken and serve topped with sage cream sauce.
