Description

A rich and savory butter-roasted chicken served with a creamy sage sauce.


Ingredients

  • 1 whole chicken
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh sage, chopped
  • 1 cup heavy cream
  • 2 garlic cloves, minced


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Season the chicken with salt and pepper.
  3. In a large ovenproof skillet, melt the butter over medium heat.
  4. Place the chicken in the skillet, breast side down, and roast for 45 minutes.
  5. Flip the chicken over, add the minced garlic and chopped sage, and roast for an additional 15 minutes.
  6. Transfer the chicken to a plate and let rest.
  7. In the same skillet, add the heavy cream and stir to combine with pan drippings; reduce heat and let simmer.
  8. Slice the chicken and serve topped with sage cream sauce.
