Description

Delicious and nutritious butternut squash falafel, perfect for a healthy snack or meal.


Ingredients

  • 2 cups cooked butternut squash
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the butternut squash and chickpeas. Mash together until smooth.
  3. Add breadcrumbs, parsley, garlic, cumin, coriander, salt, and black pepper to the bowl. Mix until well combined.
  4. Form the mixture into small balls or patties.
  5. Place falafel on a baking sheet lined with parchment paper and drizzle with olive oil.
  6. Bake for 25-30 minutes, or until golden brown, flipping halfway through.
  7. Serve warm with tahini sauce or yogurt.
