Ingredients

- 2 cups cooked butternut squash
- 1 can chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the butternut squash and chickpeas. Mash together until smooth.
- Add breadcrumbs, parsley, garlic, cumin, coriander, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into small balls or patties.
- Place falafel on a baking sheet lined with parchment paper and drizzle with olive oil.
- Bake for 25-30 minutes, or until golden brown, flipping halfway through.
- Serve warm with tahini sauce or yogurt.

- Feel free to add your favorite spices for extra flavor.
