Ingredients

  • 1 cup almond flour
  • 1/4 cup granulated erythritol
  • 1/2 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 teaspoon orange food coloring (optional)
  • 1/2 teaspoon yellow food coloring (optional)
  • 1/4 cup sugar-free candy corn (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine almond flour, granulated erythritol, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch pie pan to form a crust. Bake for 10-12 minutes or until lightly golden. Allow to cool completely.
  2. In a large mixing bowl, beat the softened cream cheese with powdered erythritol and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Divide the cheesecake mixture into two bowls. In one bowl, add orange food coloring and mix until you achieve your desired shade. In the other bowl, add yellow food coloring and mix until combined.
  5. In serving glasses or bowls, layer the orange cheesecake mixture, followed by the yellow cheesecake mixture, and then top with a layer of the cooled almond flour crust. Repeat the layers until the glasses are filled.
  6. Finish each parfait with a sprinkle of sugar-free candy corn on top for garnish. Chill in the refrigerator for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to one of the cheesecake mixtures.
  • To make it more festive, layer in some crushed nuts or sugar-free chocolate chips between the cheesecake layers.
