Ingredients

  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin

  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 cup coconut milk
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving


Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the curry powder, cumin, coriander, turmeric, cinnamon, and cayenne pepper to the skillet. Stir well to combine and cook for 1 minute to toast the spices.
  4. Increase the heat to medium-high and add the ostrich mince to the skillet. Cook, breaking it apart with a spatula, until browned, about 5-7 minutes.
  5. Stir in the drained diced tomatoes and coconut milk. Season with salt and pepper to taste. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 15-20 minutes, stirring occasionally.
  6. Once the curry has thickened slightly, taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh cilantro, alongside cooked rice or naan.
