Ingredients

  • 2 tablespoons olive oil
  • 1 pound pork tenderloin, sliced into 1-inch pieces
  • 1 large fennel bulb, sliced thin
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon unsalted butter
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the sliced pork tenderloin and cook until browned on all sides, about 5-7 minutes. Remove the pork from the skillet and set aside.
  2. In the same skillet, add the sliced fennel and onion. Sauté for about 5 minutes until they start to soften.
  3. Add the minced garlic, thyme, salt, black pepper, and red pepper flakes (if using) to the skillet. Cook for an additional 2-3 minutes, stirring frequently.
  4. Return the pork to the skillet and pour in the apple cider vinegar. Stir to combine and cook for another 3-4 minutes until the pork is cooked through and the fennel is caramelized.
  5. Stir in the butter until melted and well combined. Remove from heat.
  6. Garnish with chopped fresh parsley before serving.

Notes

  • For added sweetness, drizzle a teaspoon of balsamic glaze over the dish before serving.
  • Substitute the pork tenderloin with chicken thighs for a different protein option.
