- 2 tablespoons olive oil
- 1 pound pork tenderloin, sliced into 1-inch pieces
- 1 large fennel bulb, sliced thin
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons apple cider vinegar
- 1 tablespoon unsalted butter
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced pork tenderloin and cook until browned on all sides, about 5-7 minutes. Remove the pork from the skillet and set aside.
- In the same skillet, add the sliced fennel and onion. Sauté for about 5 minutes until they start to soften.
- Add the minced garlic, thyme, salt, black pepper, and red pepper flakes (if using) to the skillet. Cook for an additional 2-3 minutes, stirring frequently.
- Return the pork to the skillet and pour in the apple cider vinegar. Stir to combine and cook for another 3-4 minutes until the pork is cooked through and the fennel is caramelized.
- Stir in the butter until melted and well combined. Remove from heat.
- Garnish with chopped fresh parsley before serving.
Notes
- For added sweetness, drizzle a teaspoon of balsamic glaze over the dish before serving.
- Substitute the pork tenderloin with chicken thighs for a different protein option.
