Description

A refreshing and flavorful Caribbean Jerk Shrimp & Avocado Salad that combines spicy shrimp with fresh vegetables.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 ripe avocado, diced
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste


Instructions

  1. In a bowl, toss the shrimp with jerk seasoning and olive oil until evenly coated.
  2. Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for 2-3 minutes on each side, or until shrimp are pink and opaque. Remove from heat and let cool slightly.
  3. In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, avocado, and cilantro.
  4. Add the cooked shrimp to the salad mixture.
  5. Drizzle with lime juice and season with salt and pepper to taste. Toss gently to combine.
  6. Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a refreshing taste.
