A refreshing and flavorful Caribbean Jerk Shrimp & Avocado Salad that combines spicy shrimp with fresh vegetables.

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 ripe avocado, diced
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with jerk seasoning and olive oil until evenly coated.
- Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for 2-3 minutes on each side, or until shrimp are pink and opaque. Remove from heat and let cool slightly.
- In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, avocado, and cilantro.
- Add the cooked shrimp to the salad mixture.
- Drizzle with lime juice and season with salt and pepper to taste. Toss gently to combine.
- Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a refreshing taste.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the salad.
- Substitute grilled chicken for shrimp for a different protein option, or use a mix of both for added flavor.
