A creamy and flavorful soup made with carrots and ginger.
Ingredients

- 4 cups carrots, chopped
- 1 onion, chopped
- 2 tablespoons fresh ginger, grated
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and sauté until translucent.
- Add carrots and ginger; cook for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until carrots are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in coconut milk, lemon juice, salt, and pepper.
- Heat through and serve.
