Ingredients

  • 1 medium head of cauliflower, grated (about 4 cups)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cooked chicken, shredded or diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Begin by removing the leaves and stem from the cauliflower. Grate the cauliflower using a box grater or a food processor until it resembles couscous.
  2. In a large mixing bowl, combine the grated cauliflower, diced red and yellow bell peppers, shredded chicken, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper until well combined.
  4. Pour the dressing over the cauliflower mixture and toss gently to coat all ingredients evenly.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, chill for 1-2 hours.
  6. Serve cold as a refreshing side dish or light main course.
