Ingredients

  • 2 cups cauliflower florets, steamed and finely chopped
  • 1 pound ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 package (14 oz) refrigerated pie crusts (2 crusts)
  • 1 egg, whisked (for egg wash)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, warm the olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion becomes soft and translucent, about 3-4 minutes.
  3. Incorporate the ground beef into the skillet, using a wooden spoon to break it apart. Cook until the meat is browned and fully cooked through, approximately 5-7 minutes. If there is excess fat, drain it off.
  4. Add the finely chopped cauliflower along with the cumin, smoked paprika, cayenne pepper, sea salt, and black pepper. Stir well and let the mixture cook for another 2-3 minutes to meld the flavors together. Remove from heat and allow it to cool slightly.
  5. On a floured surface, roll out the pie crusts and cut out 4-inch circles using a round cutter.
  6. Spoon about 2 tablespoons of the beef and cauliflower filling onto the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges firmly to seal. Use a fork to crimp the edges for a decorative finish.
  7. Arrange the hand pies on a parchment-lined baking sheet. Brush the tops with the whisked egg for a golden finish.
  8. Bake in the oven for 20-25 minutes, or until the hand pies are beautifully golden brown.
  9. Allow them to cool for a few minutes before enjoying.

Notes

  • For an extra kick, consider adding finely chopped jalapeños to the beef mixture.
  • You can also swap the ground beef for ground turkey or chicken for a lighter option.
