A quick and healthy meal option made with riced cauliflower, perfect for a low-carb diet.
Ingredients

- 3 cups riced cauliflower
- 2 tablespoons avocado oil or sesame oil
- 2 eggs, lightly beaten
- ½ cup diced onion
- ½ cup chopped green beans or peas (optional)
- 2 tablespoons soy sauce or coconut aminos
- ¼ teaspoon garlic powder
- 2 green onions, sliced
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion and sauté for 2–3 minutes.
- Push onions to the side, add eggs, and scramble until cooked, then mix with onions.
- Add cauliflower rice, soy sauce, garlic powder, and optional veggies. Stir-fry for 5–7 minutes.
- Top with green onions before serving.
Notes
- Add chopped grilled chicken or shrimp for extra protein.
- A dash of sriracha gives it heat.
