Description

This Cauliflower Fried Rice is a healthy and delicious alternative to traditional fried rice, packed with vegetables and flavor.


Ingredients

Scale
  • 1 medium head of cauliflower, riced
  • 2 tablespoons oil (coconut or sesame)
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil
  • 2 eggs, beaten (optional)
  • Salt and pepper to taste


Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add the mixed vegetables and cook for another 2-3 minutes.
  4. Add the riced cauliflower and stir-fry for about 5-7 minutes until tender.
  5. If using, push the cauliflower to the side and scramble the eggs in the same pan.
  6. Add the green onions, soy sauce, sesame oil, salt, and pepper. Stir to combine everything and cook for another minute.
  7. Serve hot, garnished with additional green onions if desired.

Notes

  • This dish is very versatile; feel free to add any protein or additional vegetables of your choice.
  • For a vegan version, skip the eggs or substitute with tofu.
