Ingredients

  • 1 cup arborio rice
  • 4 cups vegetable broth
  • 1 medium head of cauliflower, chopped into small florets
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons truffle oil
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
  5. Pour in the white wine and stir until it is mostly absorbed by the rice.
  6. Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle.
  7. After about 10 minutes, add the cauliflower florets to the rice. Continue adding broth and stirring until the rice is creamy and al dente, about 15-20 minutes total.
  8. Once the rice is cooked, remove the skillet from heat and stir in the grated Parmesan cheese and truffle oil. Season with salt and pepper to taste.
  9. Let the risotto sit for a couple of minutes before serving. Garnish with fresh parsley.

Notes

  • For a vegan version, substitute the Parmesan cheese with nutritional yeast and use a plant-based broth.
  • Add sautéed mushrooms or peas for extra flavor and texture.
