- 1 cup arborio rice
- 4 cups vegetable broth
- 1 medium head of cauliflower, chopped into small florets
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons truffle oil
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly.
- Pour in the white wine and stir until it is mostly absorbed by the rice.
- Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle.
- After about 10 minutes, add the cauliflower florets to the rice. Continue adding broth and stirring until the rice is creamy and al dente, about 15-20 minutes total.
- Once the rice is cooked, remove the skillet from heat and stir in the grated Parmesan cheese and truffle oil. Season with salt and pepper to taste.
- Let the risotto sit for a couple of minutes before serving. Garnish with fresh parsley.
Notes
- For a vegan version, substitute the Parmesan cheese with nutritional yeast and use a plant-based broth.
- Add sautéed mushrooms or peas for extra flavor and texture.
