Description

Deliciously cheesy and herb-infused, these Cheddar & Chive Cauliflower Cakes are perfect as a side dish or a light meal.


Ingredients

Scale
  • 1 head cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, for frying


Instructions

  1. Steam the cauliflower florets until soft, about 10 minutes.
  2. Let the cauliflower cool slightly, then mash in a bowl.
  3. Add the cheddar cheese, chives, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper to the mashed cauliflower. Mix until combined.
  4. Form the mixture into patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook the patties for about 4-5 minutes on each side until golden brown.
  7. Serve warm.
