Deliciously cheesy and herb-infused, these Cheddar & Chive Cauliflower Cakes are perfect as a side dish or a light meal.
Ingredients

- 1 head cauliflower, cut into florets
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh chives
- 2 eggs
- 1/2 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 2 tablespoons olive oil, for frying
Instructions
- Steam the cauliflower florets until soft, about 10 minutes.
- Let the cauliflower cool slightly, then mash in a bowl.
- Add the cheddar cheese, chives, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper to the mashed cauliflower. Mix until combined.
- Form the mixture into patties.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for about 4-5 minutes on each side until golden brown.
- Serve warm.

- These cakes can be made in advance and reheated in the oven.
