- 1 pound ground chicken
- 1 cup shredded cheddar cheese
- 1/2 cup almond flour
- 2 large eggs
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
Instructions
- In a large mixing bowl, combine the ground chicken, shredded cheddar cheese, almond flour, eggs, green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Using a tablespoon, scoop the chicken mixture and form into patties. Carefully place the patties in the hot skillet, making sure not to overcrowd the pan.
- Cook the fritters for about 4-5 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve warm and enjoy!
Notes
- For added flavor, mix in some diced jalapeños or bell peppers.
