Ingredients

  • 1 cup shredded cheddar cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine the ground chicken, shredded cheddar cheese, almond flour, eggs, green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
  2. Heat olive oil in a large skillet over medium heat.
  3. Using a tablespoon, scoop the chicken mixture and form into patties. Carefully place the patties in the hot skillet, making sure not to overcrowd the pan.
  4. Cook the fritters for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
