Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cauliflower rice
  • 1 cup diced tomatoes (canned, drained)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink.
  4. Stir in cauliflower rice, diced tomatoes, Italian seasoning, salt, black pepper, and red pepper flakes. Cook for an additional 5 minutes until heated through.
  5. Remove the skillet from heat and mix in sour cream and half of the shredded cheddar cheese until well combined.
  6. Transfer the mixture to a greased 9×9-inch baking dish. Top with the remaining cheddar cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
