- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cauliflower rice
- 1 cup diced tomatoes (canned, drained)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink.
- Stir in cauliflower rice, diced tomatoes, Italian seasoning, salt, black pepper, and red pepper flakes. Cook for an additional 5 minutes until heated through.
- Remove the skillet from heat and mix in sour cream and half of the shredded cheddar cheese until well combined.
- Transfer the mixture to a greased 9×9-inch baking dish. Top with the remaining cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For added flavor, consider mixing in some chopped bell peppers or mushrooms with the ground beef.
- To make it spicier, add jalapeños or a dash of hot sauce to the beef mixture before baking.
