Description

Low-carb and totally dippable—pure zucchini magic!


Ingredients

Scale
  • 2 cups grated zucchini (moisture squeezed out)
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 1 egg
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt & pepper to taste
  • Extra mozzarella for topping (optional)


Instructions

  1. Preheat to 400°F (200°C). Line a baking sheet with parchment.
  2. In a bowl, combine zucchini, mozzarella, Parmesan, egg, garlic powder, seasoning, salt, and pepper.
  3. Spread into a rectangle about ½ inch thick. Bake 18–20 min until set and golden.
  4. Top with extra mozzarella if desired. Broil 2–3 min until bubbly.
  5. Cool slightly, cut into breadsticks, and serve with warm marinara.

Notes

  • Make sure to squeeze out excess moisture from the zucchini for the best texture.
  • Serve with marinara sauce for dipping.
