Low-carb and totally dippable—pure zucchini magic!
Ingredients
Scale
- 2 cups grated zucchini (moisture squeezed out)
- 1 cup shredded mozzarella
- ¼ cup grated Parmesan
- 1 egg
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- Salt & pepper to taste
- Extra mozzarella for topping (optional)
Instructions
- Preheat to 400°F (200°C). Line a baking sheet with parchment.
- In a bowl, combine zucchini, mozzarella, Parmesan, egg, garlic powder, seasoning, salt, and pepper.
- Spread into a rectangle about ½ inch thick. Bake 18–20 min until set and golden.
- Top with extra mozzarella if desired. Broil 2–3 min until bubbly.
- Cool slightly, cut into breadsticks, and serve with warm marinara.
Notes
- Make sure to squeeze out excess moisture from the zucchini for the best texture.
- Serve with marinara sauce for dipping.
