- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup erythritol or your preferred keto sweetener
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, cocoa powder, baking soda, salt, and erythritol. Mix well.
- In another bowl, whisk together the melted butter, egg, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
- Fold in the sugar-free chocolate chips until evenly distributed.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a nut-free version, substitute almond flour with sunflower seed flour.
- Add a pinch of sea salt on top of the cookies before baking for an extra flavor boost.
