- 1 head cauliflower, cut into florets
- 2 tablespoons tahini
- 1 teaspoon lemon juice
- 1 pound chicken breast
- 2 tablespoons olive oil
- 1 tablespoon dukkah spice mix
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Mix tahini with lemon juice and oil.
- Toss cauliflower florets in the tahini mixture and spread on a baking sheet.
- Season chicken breast with salt, pepper, and dukkah.
- Add chicken to the baking sheet and bake for 25-30 minutes until golden.
- Serve the roasted cauliflower and chicken garnished with extra dukkah.

- For a vegan option, replace chicken with chickpeas.
