- 2 large eggs
- 1/2 cup almond flour
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1 tablespoon butter
- 1 apple, peeled and chopped
- 1 tablespoon erythritol or other keto-friendly sweetener
Instructions
- In a bowl, whisk together the eggs, almond flour, almond milk, vanilla, cinnamon, and baking powder until smooth.
- Heat a skillet over medium heat and add butter.
- Pour a small amount of the batter into the skillet, swirling to form a thin crepe. Cook for 1-2 minutes until edges start to lift, then flip and cook for another minute.
- Repeat with remaining batter, placing cooked crepes on a plate.
- In another pan, sauté the chopped apple with the sweetener and cinnamon until soft and caramelized.
- Serve the apple mixture in the crepes and fold.
