A quick and easy cinnamon mug cake that is perfect for a single-serving dessert.

- 2 tablespoons of butter
- 6 tablespoons of almond flour
- 1 egg
- 1 to 2 tablespoons of Swerve sweetener
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of ground cinnamon
- 2 tablespoons of cream cheese
- 1 tablespoon of powdered Swerve sweetener
Instructions
- Melt 2 tablespoons of butter in a microwave-safe mug.
- Add 6 tablespoons of almond flour, 1 egg, 1 to 2 tablespoons of Swerve sweetener, 1/2 teaspoon of vanilla extract, 1/2 teaspoon of baking powder, and 1/2 teaspoon of ground cinnamon to the melted butter.
- Stir until well combined and smooth.
- Microwave the mixture for 90 seconds or until the cake is set.
- In a separate bowl, melt 2 tablespoons of butter for the frosting.
- Add 2 tablespoons of cream cheese to the melted butter and microwave for 1 minute to soften.
- Mix in 1 tablespoon of powdered Swerve sweetener and 1/2 teaspoon of vanilla extract until smooth and creamy.
- Drizzle the frosting over the mug cake and enjoy!
Notes
- For a nut-free version, substitute almond flour with 2 tablespoons of coconut flour.
- Consider adding chopped walnuts or pecans for extra texture.
